La Viña brings the original recipe for this decadent treat from San Sebastián to Hong Kong, alongside a range of classically inspired baked goods such as signature loaf cakes and house-baked croissant pastries. Lately, the ‘Basque-style burnt cheesecake’ is very famous around the world.
The difference between the New York style and that from the Basque region of Spain is that the Basque version doesn’t have the crust, and is baked at a high temperature in order to get a caramelised crust while keeping a creamy soft interior.
We came to reproduce the original recipe from the restaurant of La Viña in San Sebastian, where this style of cheesecake became famous.
Starting with this original recipe from La Viña, we did further experiments to create different flavours and presentations of this now iconic cheesecake.
